The design of the meat mixer consists of a hollow cooking chamber in the form of a semi-cylinder with a cover. The asynchronous electric drive transmits torque by means of a worm gear. Inside, the chamber is equipped with a rotating shaft with blades, their location and tilt angle of the shaft provide a uniform mixing of the minced meat and enrich it with oxygen. During mixing, protein swell, formation of colloidal solutions, is activated that increases water-binding power, simplifies the product molding, reduces mass losses during heat treatment.
